Our homemade mango chutney is much more food-friendly than the overwhelmingly acidic and jammy commercial ones available. It's a gentle apricot in colour, with discernible bits of mango, a nice sweet and sour balance, some gingery heat and garam masala spice and comes from a Charmaine Solomon recipe, simmering diced mango cheeks with cider vinegar, sugar and spices until thick and syrupy. Serve it on the side of the black pepper coconut beef (above) or keep some in the fridge for a month or two to tart up chicken sandwiches or spiced lamb cutlets. 200ml.
