Our homemade mango chutney is much more food-friendly than the overwhelmingly acidic and jammy commercial ones available. It's a gentle apricot in colour, with discernible bits of mango, some gingery heat and garam masala spice.  It comes from a Charmaine Solomon recipe, simmering diced mango cheeks with cider vinegar, sugar and spices until thick and syrupy.

Serve it on the side of the Madras curry beef, cauliflower tikka masala or tandoori chicken supremes - or keep some in the fridge for a month or two to tart up chicken and mayo sandwiches.
Suitable for freezing.  Defrost before serving.  Once defrosted, keep refrigerated and use within 4 weeks.
