Aside from tahini (obviously), the main ingredient in this sauce is lots of fresh green herbs - parsley and coriander. We blend them with the tahini (sesame paste), a bit of toasted cumin and coriander, some garlic and lemon juice and then thin it down to a good consistency - somewhere between a drizzle and a dollop.

Serve with the chermoula brined chicken or shashuka. Also delicious drizzled over grilled eggplant, lamb cutlets or fish. It is also delicious with carrot sticks or simply spread on crisp bread for a snack.
