Even as a child, before having acquired the taste for strong drink that would invest my adult life with so much pleasure, I was crazy for brandy butter. There is something magical about the way three simple ingredients - butter, icing sugar and brandy - come together and, given enough beating, whip up into something pale, fluffy and perfect. Keep the brandy butter in the fridge until about half an hour before you use it and spoon it onto your hot pudding where it will melt in delicious, boozy, saucy rivulets. 380ml - enough for 8.
