HERE'S HOW WE MAKE IT

It would be hard to think of a more refreshingly healthy lunch or dinner than this - perfectly ripe (even over-ripe) tomatoes, red capsicums, cucumber, onion and garlic, whizzed until smooth, enlivened with a good slug of red wine vinegar and thickened with a scattering of sourdough bread.

INGREDIENTS

Tomatoes, cucumber, red capsicum, garlic, red onion, sourdough bread, red wine vinegar, salt, pepper, extra virgin olive oil.

GOES WITH

Serve with a swirl of olive oil, a scattering of basil leaves and freshly ground pepper, with sourdough on the side. For a glamorous addition, add a few peeled cooked prawns or a pile of freshly picked crabmeat.

PREP, COOK AND SERVE

Suitable for freezing. If frozen, defrost overnight in the fridge. 

For an extra smooth soup, give it a final blitz in a bullet-style blender.  Serve chilled.
