It would be hard to think of a more refreshingly healthy lunch or dinner than this - perfectly ripe (even over-ripe) tomatoes, red capsicums, cucumber, onion and garlic, whizzed until smooth, enlivened with a good slug of red wine vinegar and thickened with a scattering of sourdough bread. Make sure your gazpacho is icy cold from the fridge and serve, with a good grind of black pepper and some torn basil leaves and sourdough on the side.Suitable for freezing. Defrost and give a good stir before serving.
