For those who don’t have a spare oven at Christmas, these sweet new potatoes, simply boiled and tossed in herb butter (below) are a marvellously stress-free alternative. Place in a saucepan with just enough cold water to cover and salt well. Bring to the boil and cook for about 15 minutes or until a sharp knife can just pierce through the largest potato to the centre. Drain and toss through the herb butter. Serve warm. Serving size 1 kg.
