This awesome recipe ticks every box for the responsible household snack provider (that would be us). It's full of good stuff like oats, coconut, pepitas and cranberries, is sweetened with dates, banana and maple syrup rather than processed sugar, is nut free (so it's school lunch box friendly) and has the benefit of looking, smelling and tasting wonderfully home-made without you actually having to, like, doing anything. Well, you do have to stick the tray of pre-made bars in the oven to bake, but that's as hard as it gets. This will come as a paper-lined baking tray, filled with the uncooked granola bar mixture. Place in a 160C oven for a total of 45-60 minutes (ovens vary - my home oven does it in 45, the one at work 60) or until golden brown. To help the mix hold together, remove the tin from the oven after 15 minutes cooking and press the surface down gently but firmly with something flat (eg, a potato masher or the bottom of a Pyrex jug) before continuing to cook for 30-45 minutes. Remove and cool in the tin before turning out and cutting into 8-12 bars. Keep the baked bars in an airtight container for up to a week.
