Coconut and blueberry bircher muesli

HERE'S HOW WE MAKE IT

To make it, we soak rolled oats and chia seeds overnight in coconut water, then mix them with natural yoghurt sweetened with a little honey and shredded coconut. Hiding at the bottom of your tub of muesli is a compote of blueberries, cooked down with some orange juice and zest.

INGREDIENTS

Oats, coconut water, chia seeds, shredded coconut, natural yoghurt, honey, blueberries, orange juice and zest, sugar.

GOES WITH

Eat as is or sprinkle with toasted seeds like pumpkin, sunflower or flax and flaked almonds.

PREP, COOK AND SERVE

Frozen product. Once defrosted, consume within 48 hours.  

The hardest part of prepping this dish is sticking it from the freezer to the fridge to defrost overnight so you can wake up to an incredibly delicious, super-healthy breakfast without, and this is the crucial part, having to lift a finger in the morning, when time and energy may possibly not be as abundant as one might wish.
