A fresh combination of - most likely - green beans, asparagus and broccolini (don't hold us to it, though; we'll buy whatever's best at the market on the day but it won't be anything weirdy, we promise), topped, tailed, strung and generally made ready for the Christmas table. Blanch them in well-salted, boiling water for 4 minutes, then drain, toss with butter and scatter with the toasted slivered almonds and a few flakes of salt. Small will be a 500ml tub, large a 1 litre tub.
