This is an awesome salad. In addition to ensuring a healthy and wealthy Year of the Dog, this mix of shredded raw vegetables, pickled ginger, herbs, crunchy noodles and nuts is a riot of flavours and textures, with a particularly delicious sweet and sour plum sauce-based dressing. The list of ingredients is too long to go into here (starting with shredded Chinese cabbage, moving through julienned green apple and ending with five spice) but it's a bit like a complex Asian slaw and would make a lovely lunch or light dinner on its own or as part of a Chinese banquet with the dumplings and char siu pork. It can also be a base for the ginger-soy salmon or shredded sous-vide chicken from the Favourites menu. We're dishing this up in layers in a plastic container, with the crunchy bits kept separate and the coriander whole. Empty the nuts, seeds and noodles into the salad, pluck the coriander leaves (a few bits of stalk are fine) and toss with the dressing before serving.
