14. Quinoa, fig and pistachio stuffing
It seemed unfair to us that vegos and/or gluten-avoiders should have to miss out on the pleasure of stuffing - even if they're not using it to stuff a bird - so here's our solution. It's a yummy, healthy (but not stupidly so) side dish, with steamed quinoa taking on the breadcrumb role, and lots of Christmassy herbs, diced dried figs and crunchy green pistachios. Place it in a 200C oven for 20 (small) to 35 (minutes) or until golden brown and crunchy on top. You can also use it to stuff the turkey - just make sure you add 30 minutes to the turkey cooking time and ensure that the stuffing is properly heated through.
