We roast cauliflower with fennel seeds until brown before adding diced capsicum and coriander to a tomato-based sauce of onions, garlic and ginger.
The sauce is flavoured with the spices of cumin, coriander, garam masala, turmeric and paprika, with a hint of chilli.
We then add coconut milk for richness and creaminess before finishing with a squeeze of lemon juice.

TO COOK: defrost before reheating. Empty into a saucepan and place over a gentle heat, stirring occasionally, till piping hot (70C) or empty into a microwave-safe container and heat for 2-4 minutes, stirring occasionally, until piping hot (70C) throughout.
DEFROST INFORMATION: suitable for freezing. May be cooked from frozen or defrosted overnight in the fridge. Keep refrigerated and consume within 48 hours. For a quicker defrost, place sealed bag in room temperature water and ensure that you finish cooking within 2 hours of starting the defrosting process.
