Cauliflower Tikka Masala
We roast cauliflower with fennel seeds until golden and tender before adding diced capsicum and coriander to a tomato-based sauce of onions, garlic and ginger.
The sauce is flavoured with the spices of cumin, coriander, garam masala, turmeric and paprika, with a hint of chilli.
We then add coconut milk for richness and creaminess before finishing with a squeeze of lemon juice.

Serve on its own or with any other curry, scattered with fresh coriander, coconut or steamed basmati rice, chutneys and a cucumber raita.
Frozen product. Defrost in refrigerator. Once defrosted, reheat and consume within 48 hours.
Defrost fully, then empty into a saucepan or microwave-safe container and reheat gently, stirring occasionally until piping hot.
