Is it a stretch to describe a vegan, paleo curry as luxurious? Because this one, from Sri Lanka, definitely feels extravagant, with its lavish use of cashews and velvety, subtly spiced sauce. The peas give pops of colour and flavour in the curry's creamy whiteness and toasted shreds of coconut add a nutty finish. Don't expect the cashews to be brown and crunchy; these are raw nuts, cooked till soft and sweet; it's very different and very delicious.
