
Caponata
This Sicilian dish - and we're aware this is a bold statement - is one of the most delicious vegetable preparations we know, a combination of creamy, golden diced eggplant, salty capers and olives, sweet tomato sauce and toasted slivered almonds that reflects Sicily's fascinating culinary history. Serve warmed through or at room temperature, scattered with the toasted slivered almonds. Because of the high acid content, this keeps well in the fridge for a few weeks - almost like a chutney or pickle.
Eggplant, salt, olive oil, garlic, celery, onion, green olives, capers, crushed tomatoes, red wine vinegar, sugar, slivered almonds.

This is a lovely accompaniment to the herb-marinated butterflied leg of lamb but also makes a great vegetarian stand-alone dish for lunch or supper, with a hunk of toasted bread and maybe some grilled halloumi or poached eggs.
Frozen product. Once defrosted, reheat and consume within 48 hours.
Defrost fully. Remove the sachet of almonds. Then reheat gently in a saucepan or microwave-safe container, stirring occasionally until piping hot. Serve warm or at room temperature, scattered with the toasted almonds.
