To make our mash, we boil desiree potatoes till tender, then we simply puree them through a food mill  and whip with butter and milk till velvety smooth.

Reheat in the microwave or over a gentle heat in a saucepan.  As you reheat it, the mash may separate and look lumpy and watery for a time but if you heat it gently in a saucepan, stirring from time to time, then suddenly, magically, it will reassemble itself and be as fluffy and delicious as it was the day it was made. 

Defrost information: defrost overnight in the fridge. You can also microwave from frozen - stir every minute or so and breaking up any frozen lumps.

Serve with sausages, pies, schnitzel... anything you like, really.
