Braised Swiss chard with lemon and garlic

HERE'S HOW WE MAKE IT

How can something so simple and so healthy be so very, very delicious? The great thing about Swiss chard is that it's two vegetables for the price of one - the mild, crunchy stalk and the earthy, minerally leaves. Here we gently sweat the sliced stalks with garlic and thyme till tender, then add the leaves and allow to wilt and soften before tossing through with lemon zest and thyme. This vegetable dish will make any dinner complete - or could be used as the base for a great frittata. Defrost and reheat in a saucepan or microwave until hot and serve.

INGREDIENTS

Swiss chard, garlic, lemon zest, lemon juice, olive oil, butter, onion, salt, thyme, pepper
