Peas braised in the French style (gently cooked with lettuce, shallots and butter until a muted green rather than being quickly boiled) are sweet and delicious and they go so well with roast poultry. As for ham and peas, oh my, what a glorious combination!

Roast a turkey and potatoes till they're crisp and golden, add the french braised peas, and you'll have a dinner made in heaven. Also goes well with the duck confit or glazed ham.
Suitable for freezing.
Heat gently in a saucepan or microwave, stirring occasionally, until piping hot and serve with your Christmas feast.
