There's lots of health claims made for black rice (nutrients, fibre, antioxidants, etc) but we just think it's really cool. Shallow, us?
We cook the rice so that it's nutty and shiny and dish it up with bright green edamame, shredded purple cabbage, finely sliced red radishes and toasted sesame seeds. The dressing is a sweet and sour mix of tamari (wheat-free soy), sesame oil, maple syrup and lime juice, with a bit of garlic and ginger and comes separately for you to toss through before serving.

Remove the tub of dressing and tip the salad into a bowl. Toss the dressing through and serve.
