We peel and grate the beetroot and cook it gently with onion, cider vinegar and brown sugar with a little bit of spice, till it's tender and the liquid has reduced. It will last in the fridge for at least three weeks and goes brilliantly with steaks or sausages as well the burgers. Gluten free. Not suitable for freezing. Vegetarian.
