We don't make our own mayonnaise for this - not out of laziness (the very idea!) but to keep it safe for our pregnant and elderly customers. So we use a good quality, whole-egg commercial mayo and then zhoosh it up with loads of herbs - basil, mint, dill and parsley - and a few blended cornichons (baby gherkins) and garlic for punch and lemon juice for tartness.
