This fresh, green mayo is a blend of whole egg mayonnaise, masses of basil, mint, dill and parsley with a few blended cornichons (baby gherkins) and garlic for punch and lemon juice for tartness. It will be endlessly useful, as a dip for seafood or tossed through cold new potatoes as a potato salad - any leftovers will make a delicious spread for a ham or turkey sandwich on thick, toasted sourdough. 200ml.
