The first thing to know is that we get amazingly good fresh snapper - skinless and boneless fillets for this dish - from Kevin, our friendly seafood supplier. The miso butter - which melts as you cook it into a deliciously umami-laden sauce - is a simple compound of butter and white miso which we stir through with chopped chives and sprinkle with sesame seeds. We snap freeze it to make sure it's as fresh as the day it was caught when you cook it.

Frozen product. Once defrosted, cook and consume within 48 hours.  

NB: This product is raw and should be fully cooked before consumption.  While every effort has been made to ensure that the fish is bone and scale free, please be aware that some bones and scales may remain.

Defrost fully before cooking. Remove plastic film and place in a preheated 200C oven for 15-18 minutes or until the snapper is just cooked. Check with a fork to make sure that it flakes. 

Sprinkle with sliced spring onion and chilli if you wish and serve with lime or lemon wedges. You can also serve with some steamed vegetables dressed with soy and sesame oil (we like a mixture of enoki mushrooms, spring onions and and asparagus or broccolini) and rice, noodles or even mashed potato.
