
8. Queensland cooked tiger prawns
These are unbelievably good, meaty, shell-on prawns with sweet flesh and a fresh, crisp texture. They will come gas-flushed (replacing oxygen with an inert gas mixture to keep them fresher longer) so will have a good five days on them from delivery and be perfect for Christmas.

Serve with the green herb mayo, or an Asian dipping sauce made from equal parts fish sauce, lime juice and white sugar, with finely chopped garlic and red chilli to taste. Or go fully retro with a prawn cocktail - see below for our take on it.

Take the heads off, grab the legs and peel the shell from the body in one swift, impressive movement. Leave the tails on as a handle for dipping.
