Chipotle-marinated chicken with jalapeno-lime salsa
We marinate free-range chicken supremes in a mix of toasted cumin, garlic and fresh coriander and blend in pickled jalapeno peppers and chipotle in adobo for extra oomph.
We then make a zingy green salsa of fresh and pickled jalapenos with coriander, lime juice, garlic and spring onion to drizzle over the roasted chicken breasts before serving.
Spray or drizzle the chicken breasts with olive oil.
DEFROSTED: cook uncovered for 25 minutes, allow to rest for 5 minutes.
FROZEN: cook uncovered for 40 minutes or until juices run clear when pierced with a skewer. Allow to rest for 5 minutes.
Serve with a salad and roast potatoes or slice and wrap in warm soft tortillas with sour cream, slaw and jalapeno-lime salsa
