HERE'S HOW WE MAKE IT

Everyone's favourite Thai soup - gently spicy, creamy and fragrant, with poached free-range chicken and oyster mushrooms in a coconutty base, infused with galangal, lime leaves, lemongrass and coriander. We're lightening the soup up a bit by substituting home-made chicken stock for some of the coconut milk and feel free to extend the soup further and make more of a meal out of it by adding sliced Asian greens and maybe even noodles. This will freeze well; defrost before reheating. Gluten free.

INGREDIENTS

Free-range chicken, coconut cream, chicken stock (bones, carrots, onions, celery, herbs, garlic, black pepper), lemongrass, red onion, galangal, coriander roots, kaffir lime leaves, salt, fish sauce, lime juice, brown sugar. long green chillies, coriander, oyster mushrooms.
