
Thai chicken balls in lemongrass broth
A light but intensely satisfying Thinner Dinner dish, with herby free-range chicken meatballs in a clear lemongrass and lime leaf-infused broth. Suitable for freezing; defrost before reheating. We're serving this as a 1 litre (2-3 person, depending on accompaniments) and an individual 380 ml serve, perfect for a microwaved office lunch.

Add a handful baby spinach or sliced Asian greens to cook in the broth when it's hot and garnish with sliced red chilli and coriander leaves. If you want to pull this in at about 300 calories - and why wouldn't you? - dish up as is or with shirataki noodles or you could make a more substantial dish by adding rice or wheat noodles.
