Crisp, tangy green mango pairs beautifully with smoked free-range chicken in this Thai-inspired salad, which is loaded with vibrant flavour from herbs, spring onions and baby tomatoes and a sweet-sour lime juice/fish sauce dressing. This will come in kit form - sorry, non-kit lovers but green mango starts to soften once it's been cut and the prep really is really very simple - with the dressing made and the peanut/crisp shallot garnish packaged up, but the remaining ingredients left fresh and whole. It should take 5-10 to take you from, "What's for dinner?" to "Oh my goodness, this is unbelievably delicious - did I really make this myself?". It will serve 2 generously or 4 as an entree.
