We marinate chicken breasts in a reduced mixture of tamari (wheat-free soy) and maple syrup, with a touch of garlic and sesame oil. We then seal each breast fillet tightly in a vacuum-sealer bag and simmer them in a water bath - sous vide - which results in unbelievably tender, succulent chicken with a lovely sweet/salty balance. Serving size is one marinated, cooked chicken breast - enough to shred and serve in a salad for two.

Open the packet and pour off the excess liquid. Slice or shred the chicken before adding to salads, noodles or sandwiches.
Shred or slice the chicken and add it to the black rice and herb salad. But it's a versatile little beast - use it in wraps with aoili, avocado and rocket, rice paper rolls with julienned cucumber, spring onion and herbs or shred it over an Asian slaw.
