This has everything we're looking for in a light, fresh, midweek dinner. It's a low-fat stir fry of minced chicken,  finely sliced red onions and squeaky snake beans, with masses of flavour from lime leaves, chilli, fish sauce, coriander and mint, tossed through with lime juice. The chicken will come raw, marinated with all its flavour components, and vacuum-packed, with the herbs and lime on the side for adding at the last minute for maximum oomph. To prepare, heat a wok till smoking, swirl in some oil and stir fry the chicken mixture for about five minutes, tossing and flipping and breaking up any lumps with a wooden spoon, till the chicken is just cooked. Add the ready chopped snake beans and toss for another minute or so, then stir through the plucked herbs. Squeeze in the lime juice and serve, wrapped in cos lettuce leaves if you'd like. Marinated chicken suitable for freezing (defrost before cooking); herbs, snake beans and lime not.
