Chicken, sweetcorn and black bean burrito bowl

HERE'S HOW WE MAKE IT

A colourful, flavour-packed confetti of free-range chicken with diced red capsicum, black turtle beans and coriander bound together with a Mexican-accented, tomato-based sauce.  Lay out a spread of guacomale, salsas, tacos and burritos and you have a certified crowd-pleaser.  We brown the mince with cumin, coriander, smoked paprika, tumeric, chilli, cinammon and star anise and cook until fragrant before adding tomatoes, capsicum, corn, jalapenos and black turtle beans and a final handful of fresh coriander. Defrost fully then reheat gently in a saucepan or microwave, stirring occasionally, until piping hot.

INGREDIENTS

Free range chicken mince, black turtle beans, garlic, fresh coriander, red capsicum, ground coriander, cumin, pickled jalapeno peppers, rice bran oil, onions, ginger, salt, smoked paprika, chilli, turmeric, cinnamon, star anise, crushed tomatoes, tomato paste, corn kernels.
