A light, elegant and easy chicken casserole, just right for these warm evenings, with boneless free-range chicken in a stock- and white wine-based sauce flavoured with parsley, chives, dill and, chicken's favourite herby friend, tarragon. We're making this as a low-fat Thinner Dinner, but feel free to swirl in some creme fraiche or cream for a bit of richness and add any lightly blanched green vegetable of your choice to complete the dish - asparagus, peas, snow peas, baby spinach or little florets of broccoli would all be good. Defrost fully and reheat in a saucepan or microwave, stirring occasionally, till piping hot.

This will make a lovely Thinner Dinner (it's about 350 calories per person) with a simple salad on the side or serve with new potatoes, mash or pasta. Freshen it up with whatever herbs you have to hand scattered over the top and add lightly blanched green vegetables to cover all your bases in one dish. If you're not worried about calories, a blob of creme fraiche stirred into the reheated dish wouldn't go astray.
