Prosciutto-wrapped turkey breast with apricots and almonds
We stuck a few of these delicious stuffed, rolled turkey breasts in the freezer before Christmas and, while they'll last for months, we'd like to free up some space so we're offering them to you at a significant discount - they make a great dinner party centrepiece, hot or cold. We'v brined the breast for succulence and stuffed it with a luscious, tangy blend of spiced apricot chutney, sage and toasted almonds. then rolled it into a neat cylinder wrapped in prosciutto, which will protect the delicate meat as it cooks, as well as adding flavour. Defrost fully and pat dry then roast in a 200C oven for 30 minutes then allow to rest, covered, for ten minutes before carving into centimetre thick slices and serving. This will feed about 8 people.
