BFC - Buttermilk "Fried" Chicken

HERE'S HOW WE MAKE IT

We marinate free-range drumsticks in buttermilk scented with rosemary and garlic overnight for tenderness, then coat them in a panko breadcrumbs, mixed with chopped herbs and toasted ground spices. They come as six crumbed drumsticks to a tray, ready for you to bake at home.  

INGREDIENTS

Free-range chicken, rosemary, garlic, buttermilk, panko breadcrumbs, wheat flour, salt, cayenne, cumin, fennel, coriander, smoked paprika, thyme, black pepper.

Serves 4-5 adults or an older/larger family

GOES WITH

Serve with lime wedges, slaw and a baked potato or potato salad.

PREP, COOK AND SERVE

Suitable for freezing. Defrost before use.

Preheat an oven to 180C and, for best possible results place the drumsticks on an oiled cake rack over a baking tray, spritz with a little olive oil or other spray and bake for 45 minutes or until golden and cooked through. If you're washing-up averse - and who of us is not? - you can just leave them in the tray they come in and spray or brush with oil before baking as before.
