Spicy pork larb with lime leaves

HERE'S HOW WE MAKE IT

This is versatile package of raw, marinated pork mince in a marinade/paste of chilli, lemongrass, coriander and galangal. It comes with  fresh kaffir lime leaves and a finishing sauce of seasoned fish sauce, ready for stir-frying with whatever vegetables you like. 

INGREDIENTS

Pork mince, red onion, garlic, birds eye chilli, lemongrass, coriander root, galangal, shrimp paste, fish sauce, kaffir lime leaves, brown sugar.

SIZES

Small:
Serves 2 adults with accompaniments
Large:
Serves 4 adults with accompaniments

GOES WITH

Serve with steamed jasmine or coconut rice, or noodles - you can also have some baby cos or iceberg lettuce on the side to wrap spoonfuls of mince as a sort of Thai sang choi bau.

PREP, COOK AND SERVE

Frozen product. Once defrosted, cook and consume within 48 hours.

Please note: this product contains raw pork mince and should be fully cooked before consumption.

Defrost fully, then heat a wok till smoking. Swirl in some oil and add the pork mince, flipping and breaking up till it's coloured and there are no lumps. Add whatever vegetables you like (snake beans, chopped choy sum, blanched Chinese broccoli, etc) then add the lime leaves, crushing as you go. Continue to cook until vegetables are just tender. Stir through the seasoned fish sauce and scatter with Thai basil or coriander leaves.
