Spanish meatballs with chorizo and chickpeas
This meal in a bowl has all the health and planet-saving qualities of the chickpea combined with the deliciousness of meatballs and chorizo, in a hearty, rich Spanish tomato sauce - how could it fail to be both Moorish and more-ish?
The pork meatballs, with toasted, slivered almonds are flavoured with a very Spanish combination of cinnamon, orange zest, fennel, oregano and paprika and roasted in the oven while we fry slices of chorizo and use its oil as a base for a rich red wine and tomato sauce. We mix the balls, sauce, chorizo and chickpeas into a happy jumble and then dish it up.
Frozen product. Once defrosted, cook and consume within 48 hours.
TO COOK: Empty into a saucepan or microwave-safe container and reheat gently, stirring occasionally, till piping hot.
