We simmer split peas, onions and carrots with ham hocks until the peas have collapsed and the hocks have surrendered their smoky flavour. We then remove them, add fresh green peas, both for colour and sweetness, before blending the soup and returning the shredded hocks - oh, the taste of childhood comfort!

Serve with warm crusty sourdough and a good grind of pepper.

 

Reheat gently in a saucepan or microwave, stirring occasionally, till piping hot.

DEFROST INFORMATION: defrost overnight in the fridge. For a quick defrost, place in a sink of warm water and ensure that the defrosted dish then reaches 70C (piping hot) within two hours of beginning the defrosting process.
