A thigh-slapping Alsatian winter dish of sweet and sour braised Savoy cabbage, chunks of smoky sausage and ham hock with aromatic notes of fennel and juniper. Now, before you go: "Ewww, cabbage", can I tell you that this dish has been known to convert even the most reluctant child to the joys of that maligned vegetable, probably because its flavour is softened by wine, vinegar and sliced apples and also because, frankly, who can resist a good bit of pork on a cold winter's night? Reheat gently and serve with a baked or mashed potato and a selection of mustards. Gluten free. Suitable for freezing; defrost before reheating as above.
