Defrost and heat a wok till smoking, swirl in some oil and add the pork mixture, stir and flip, breaking up any lumps, until fragrant, brown and cooked. Add a tablespoon each of oyster sauce, soy sauce and shaoxing wine or dry sherry, a sprinkle of sugar, chopped spring onion and coriander and mix through. Serve, wrapped in baby cos or iceberg lettuce leaves and/or rice or noodles. Small will serve 2 as a main course with lettuce and rice, four as an entree;
