We coat diced beef in a fresh curry paste of lemongrass, garlic, ginger, galangal and other aromatics.  We then add coconut cream and freshly ground and roasted spices (cumin, fennel, cloves and cinnamon).  We add kecap manis and braise for hours until the sauce is clinging to the tender meat.  A final addition of toasty desiccated coconut further thickens the sauce and gives an additional boost of flavour.  We dish this up in a dual compartment tray with the beef on one side and the coconut rice on the other.

Serve with a squeeze of lime, some fresh coriander and a chopped cucumber salad on the side.

Frozen product.

Pierce film and microwave for 3 minutes, peel back plastic film, stir both compartments gently, replace film loosely, then microwave for a further 1 (from defrosted) to 3 minutes (from frozen), or until evenly heated through.  Allow to rest for a minute before serving.

DEFROST INFORMATION: defrost overnight in the fridge.  Once defrosted, keep refrigerated and reheat within 48 hours.
