
Beef Bolognese
The most all-round, useful and generally pleasing thing to have in your fridge or freezer; our Bolognese - in this instance beef, for the non-pork eaters. It is classically simple, relying on gentle, slow cooking to bring out the inherent sweetness of its carrot, onion and celery base, then a long simmer with tomatoes, herbs and red wine till it's thick and rich. There's a few dinners sorted then!
Beef mince, onion, carrot, celery, garlic, red wine, crushed tomatoes, tomato paste, bay leaves, thyme, lemon zest, salt, pepper.

Individual:
Serves one person generously with pasta
Small:
Serves two-three adults with pasta
Large:
Serves four-six adults with pasta
Serve with any sort of pasta, polenta or gnocchi, a generous shower of grated parmesan and a green salad.
LOW CARB: Serve with zucchini noodles - spiralised zucchini that you've toss in a frying pan with olive oil and salt till just tender - and a big pile of salad.
Reheat gently in a saucepan or empty into a microwave-safe container, and heat, stirring occasionally, until piping hot.
DEFROST INFORMATION: May be cooked straight from frozen or defrosted overnight in the fridge. Keep refrigerated and consume within 48 hours. For a quick defrost, place sealed bag in room temperature water and ensure that you finish cooking within 2 hours of starting the defrosting process.
