HERE'S HOW WE MAKE IT

We marinate free-range chicken thighs in a middle eastern spice mix and roast them with a little lime juice and sea salt. Once cooked we shred the meat and serve it on a bed of pearl cous cous, studded with currants and herbs and  sides of pickled red cabbage and roasted cauliflower. The dish comes with a sachet of green tahini for drizzling on top.

INGREDIENTS

Cous cous salad [cous cous, dressing [olive oil, lemon juice, garlic, salt], preserved lemons [lemon, salt, lemon juice, bay leaves, cinnamon, cardamom, black pepper, cloves], currants, red chilli], free range chicken thigh, cauliflower, green tahini sauce [tahini, water, lemon juice, fresh coriander, parsley, mint, salt, garlic, cumin ground, coriander ground], pickled red cabbage [water, white wine vinegar, red cabbage, sugar, salt], lime juice (lime juice 99.96%, potassium sorbate), olive oil, salt, cumin ground, garlic, coriander ground, turmeric, paprika

PREP, COOK AND SERVE

Frozen product. Heat straight from frozen or defrost in the refrigerator. Once defrosted, reheat and consume within 48 hours.

Peel back the film and remove the sachet then lay the film back over the tray.
DEFROSTED: Microwave for 3 minutes or until piping hot and drizzle with green tahini sauce.
FROZEN: Defrost the sachet in a bowl of warm water and then microwave the dish for 6 minutes or until piping hot, stirring halfway through.
Drizzle with green tahini sauce.

OVEN: Remove the plastic film  and the sachet of dressing and cover with foil then heat in a 180C oven till piping hot.
