Teriyaki chicken and vegie noodles
A great intro to Asian food for toddlers - with good, wholesome ingredients, a decent whack of protein but without the salt and sugar that comes with your average takeaway.
We marinate boneless pieces of free-range chicken in ginger, garlic, sesame oil, honey and salt-reduced soy sauce then stir fry it with a little sliced onion. To the pan, we add julienned carrot and finely sliced cabbage and stir till just wilted, before tossing through hokkien noodles with chicken stock and a dash of rice vinegar. The vegetables pretty much disappear into the noodles - the kids will hardly know they're there, but you will!
