Easy Spiced Rice Recipe

Love our butter chicken? Take it up a notch with our easy spiced rice! We've added peas here, but you can also add currants, toasted almonds, chopped coriander, mint or parsley. You can serve the spiced rice with any of our Indian curries - it's especially delicious with a cucumber raita on the side.



Ingredients

2 tablespoons oil
generous pinch of salt
1/2 teaspoon cumin seeds
2 cloves
1 cinnamon quill
1 teaspoon turmeric
1 cup of basmati rice, rinsed
1.5 cups of water

Method

Heat the oil in a medium saucepan then add the salt and spices, stirring over a lower to medium heat until fragrant
Add the basmati rice, then stir well and cover with water. Bring to the boil, then turn the heat down very low and simmer with the lid on for 15 minutes. Add the peas, put the lid back on and steam over a low heat for a further five minutes. Fluff up with a fork, removing whole spices if you'd prefer. Serve with any of our Indian curries.
